How to prepare: Oven-baked prawns au gratin

To prepare the prawns au gratin in the oven, first clean the prawns. Rinse them carefully in fresh running water. Eliminate the central part of the carapace leaving the head and the extreme part of the tail. To eliminate the carapace trying to keep the prawn intact you can help yourself with kitchen scissors, it will be easier. Eliminate the intestinal thread using a paring knife. Just cut the back and remove it. At this point, engrave them more deeply lengthwise, without dividing them in two. This opening will be used to accommodate the gratin. Dry them and arrange them on a cutting board. Prepare the breadcrumbs for the gratin: in a bowl add the chopped parsley, the grated lemon zest, salt and pepper to the breadcrumbs.

At this point, place the prawns on the baking sheet lined with parchment paper and fill each slot with the breading. Spread a drizzle of oil on each prawn and cook in the oven for 15/20 minutes. When the breadcrumbs are golden, your baked prawns au gratin will be ready to serve hot.
