Quinoa burgers with vegetables are a very nutritious, healthy and energetic second course, suitable for those who follow a vegan diet or anyone who wants a single dish full of flavor. They are an excellent choice for meatless burgers and are very simple to make. An exquisite and protein dish thanks to quinoa, a delicious and versatile ingredient. It is no coincidence that quinoa, which is also characterized by the total absence of gluten, is considered by the Amerindian populations to be the mother of all seeds. Here are the ingredients and preparation of this easy and tasty recipe.

Ingrediants

  • quinoa 400 gr
  • boiled carrots 50 gr
  • zucchini 50 gr
  • boiled potatoes 30 gr
  • salt a pinch
  • pepper a pinch
  • paprika powder 1 level teaspoon
  • chopped parsley 10 gr
  • fry oil to taste

Preparation

  1. Boil the quinoa in a large pot for about 20 minutes and let it cool. If you have never cooked quinoa before, here is how to do it.

  2. Cut potatoes and carrots into small cubes. If you prefer, you can also pass them through a potato masher and get a puree.

  3. Take the courgettes and grate them as if to form confetti.

  4. Pour the quinoa into a large bowl, add the zucchini, carrots and potatoes.

  5. Add all the remaining ingredients: paprika, salt, pepper and parsley.

  6. Mix well, mixing with your hands until you get a homogeneous mixture.

  7. Shape into meatballs and then mash to get burger medallions.

  8. Heat the frying oil in a heavy-bottomed skillet over medium-high heat and cook the quinoa burgers until crispy on the outside and lightly browned. Turn them only once, however the cooking time should be about 5 minutes.

  9. Just let it cool down. Serve your quinoa burgers, accompanied by a tomato and lettuce salad.

The suggested recipe is to cook your burgers in boiling oil, but if you want to bring an equally delicious but lighter dish to the table: bake your burgers in the oven! Doing it is very simple. Take your medallions and place them on a baking sheet after covering it with parchment paper. Cook in a convection oven for 10 minutes at 200 °, taking care to turn the quinoa and vegetable burgers halfway through cooking. Et voila… The dish is served!
