To make the red rice with caramelized pumpkin and radicchio, peel and cut the pumpkin into cubes and caramelize it over low heat in a pan with sugar, vinegar and water. Cook it for about 25 minutes until it becomes soft and the liquid does not congeal. Salt and pepper to taste.

Meanwhile, sauté the radicchio cut into strips (exclude the central coast to mitigate the bitter taste) in the oil, and blend it with the red wine. Cook it for about 10/15 minutes until it is softened but still crunchy.

Boil the rice in boiling water for 18 minutes, then drain and leave it aside. As soon as all the ingredients are ready, sauté half of the pumpkin with the radicchio in the same pan (set aside the rest of the pumpkin for garnish) along with the rice. Season with salt and pepper. Serve the red rice with caramelized pumpkin and radicchio and decorate with the remaining pumpkin cubes.
