the peas risotto is a pea-based, vegetarian starter that can be prepared quickly even a few minutes before sitting down to eat.
How to prepare a pea risotto
To prepare the pea risotto, cook the peas in a pan with oil, salt and a pinch of pepper for two minutes (1). Keep one half aside and mix it with a drop of water. Cook half an onion in a pan with two tablespoons of oil for 3/4 minutes and add the rice to grill it for about a minute and a half along with the onion. Cook the risotto, adding a ladle of vegetable stock from time to time (2). Add the peas after the first ladle and season with salt. Cook over low heat, adding a ladle of vegetable broth from time to time. Just before the end, add the cream of peas, mix and serve (3).
