Preparing it is really simple, although it takes about an hour to cook the farro. But this operation does not require any attention and can be speeded up by using a pressure cooker.
The protagonist of this dish is an ancient cereal that was abandoned for a long time because growing it was not so convenient in economic terms. Fortunately, thanks to its numerous nutritional properties, the Emmer it has been rediscovered and today it is used in numerous hot and cold preparations. The first thing to do to prepare the spelled, cherry tomatoes, olives and pecorino salad is to soak the spelled for 12 hours. After this time, rinse it and cook it in abundant salted water, flavored with a clove of garlic, for about 45 minutes, then drain, season with 4 tablespoons of oil, a pinch of salt and oregano and let it cool. Then add the halved cherry tomatoes.


Peel the spring onion and cut it into thin slices. Cut the pecorino into cubes. Combine both of these ingredients with spelled and mix.


Also add the olives and a few chopped basil leaves according to your taste. Complete with a drizzle of oil and mix again. The spelled salad, cherry tomatoes, olives and pecorino is ready to be enjoyed.
