- 250 g of small courgettes with the flower
- 1 sachet of saffron
- 1 shallot
- 2 sprigs of thyme
- 4 tablespoons of extra virgin olive oil
- salt
- pepper

How to prepare: Strozzapreti with courgettes and saffron


Start preparing the strozzapreti with zucchini and saffron by boiling the water for the pasta. While this comes to a boil, separate the flowers from the courgettes. Peel the courgettes and cut them obliquely into chunks. Then clean the flowers by removing the base (this will also remove the pistil). Chop the shallot and sauté it in a pan with the oil and the chopped courgette flowers.


Dip the strozzapreti in the water and cook for the time indicated on the package. While the pasta is cooking, add the courgettes to the courgette flowers, wet with 2 ladles of pasta cooking water and perfume with the thyme leaves. Season with salt and pepper and cook everything until the courgettes become tender.


Drain the pasta al dente, recovering a little of the cooking water, transfer it to the pan with the zucchini and flowers, add the saffron dissolved in a little cooking water from the pasta, raise the heat and sauté everything for a couple of minutes to flavor well. The strozzapreti with courgettes and saffron are ready.
