The turmeric pancakes are a spicy and fragrant version of the most famous American breakfast pancakes in the world, which can be prepared in different variations, from gluten-free pancakes to Matcha tea pancakes, passing through savory salmon pancakes.
As in the basic recipe, it is a question of preparing a batter based on milk, flour and eggs with a little yeast. In this case the flour used is mixed, white and wholemeal, and spices are added: turmeric, cinnamon and ginger powder.
Good and beautiful these deep yellow pancakes, given by turmeric, are a quick and easy recipe for a delicious breakfast or brunch. Garnish them with fresh fruit, honey or maple syrup, but also with fresh ricotta and chopped pistachios.
INGREDIANTS for Turmeric pancakes
- 250 ml of whole milk
- 100 g of flour 00
- 90 g of wholemeal flour
- 1 egg
- 2 tablespoons of granulated sugar
- ground cinnamon to taste
- 1 heaped teaspoon of turmeric powder
- powdered ginger to taste
- the grated zest of 1/2 lemon
- 2 teaspoons of baking powder for cakes
- salt
- honey or maple syrup for serving
HOW TO PREPARE: TURMERIC PANCAKE

1 – To prepare these turmeric pancakes, collect all the ingredients in the jug of a common kitchen mixer: the two flours, sugar, yeast, turmeric, cinnamon, ginger, grated lemon zest, egg, salt. and milk.

Blend everything until you get a smooth and lump-free cream.

2 – Heat a large non-stick pan over medium heat and brush it with some melted butter. Remove any excess with kitchen paper. Pour a small ladle of batter into the pan creating a circular pancake with a diameter of 8-10 cm.

You can cook 2-3 at a time compatibly with the size of the pan. Cook for 2 minutes or until you notice large bubbles on the surface of the pancake. With a spatula, turn and continue cooking for 1 minute.

3 Proceed in this way until the batter is used up, keeping the pancakes warm, which will gradually be cooked in the oven at a temperature of 100 °, taking care to brush the pan from time to time with additional melted butter.

Serve the turmeric pancakes with maple syrup, thin honey or whatever your imagination suggests.
